I think it means you are giving up something solid in your life, just for something that will fade from your memory. (Evanescence means a fading memory)

It basically means that "you" are gambling...risking something that you know is good for something you HOPE might be even better.

Kind of a fancy way of saying "The grass is always greener on the other side of the fence."
