+/- is a stat which is modified when a goal is scored. If a player is on the scoring team, if he is on the ice when a goal is scored, that player's +/- rating is increased by one. If he is on the ice when the opposing team scores, his rating is decreased by one. Goaltender's do NOT have this stat as an official stat, and the rating is NOT modified for a powerplay goal (only short-handed and even-strengthed goals).
PIM (which literally is an acronym for "penalties in minutes" is a stat which indicates penalties. If a player receives a minor penalty, he receives 2 PIM. A double minor warrants 4 PIM. A match penalty, or any major penalty (including fights, checking from behind, etc.) gives the player 5 PIM. A Game Misconduct or a 10-minute Misconduct means that player receives 10 PIM.
PPP is an acronym for "power play points". This stat simply shows how many points (goals and assists) a player accumulates on any goal scored on the power play.
GAA means "goals against average", which is a stat only used for goaltenders. This stat uses a formula to calculate. The formula is (GA*60)/(T.O.I.). GA is how many goals the goalie allowed, 60 indicates the 60 minutes of a regulation ice hockey game, and T.O.I. is how much time (in minutes and seconds) the goalie was on the ice. The number is usually displayed as a two-decimal number, such as 2.00. For example, if a goaltender allowed 3 goals through 2 periods of a game, you put those figures into the formula, which gives you (3*60)/(40), with 40 meaning the 40 minutes the goalie played in during the 2 periods. Then, using order of operations, solve the equation, so you then have (180)/(40), which gives you a GAA of 4.50.
SHO is another stat used only for goalies, which indicates shutouts. A goalie receives a shutout if he is on the ice for the entire game (meaning the goalie does not get replaced by the backup goalie) and the opposing team fails to score a goal during the course of the game (meaning the score is 1-0, 2-0, etc.)

+/- refers to the players on ice for EVEN STRENGTH or SHORTHANDED goals. Being on ice for a power play goal does not affect your +/- score. If you're on the team that scores the goal, you get +1 for your score; if you're on the other team, -1 for you.
PIM as explained before is penalties in minutes... I'm assuming for a fantasy league that you want to avoid these. Penalties come in increments of 2 (minor penalties like hooking or high-sticking), 5 (for fighting), and 10 (for major misconduct penalties).
PPP has to be power play percentage... I think.
GAA is the goals allowed average for goalies. Goals allowed divided by total minutes played by the goalie multiplied by 60... I think.
SHO is not shots on goal... that's SOG. SHO is shutouts, referring to individual shutouts for goalies.

PIM = Penalties in Minutes
PPP or PP% = Power Play Percentage
GAA = Goals Against Average
SHO = May be Shut Outs, because Shutouts is SO on stats.

The +/- stat (plus/minus lol) is as follows: everytime you are on the ice and your team scores a NON-POWER PLAY (unless they have the power play--your team shorthanded) goal you get a +, whether you got an assist or the goal or neither. Everytime you are on the ice and the other team scores on your team (unless YOU ARE SHORTHANDED) you get a -. The goal is to have a really high + rating at the end of the season.
