Simplified.
Once you find a strong shell, brace the doors front to back and from lower front seatbelt mount to the opposite side to keep its shape.
Then, cut out and remove inner wings, bulkhead, floor pan and boot area.
Get your chosen V8 and box and place in the car along with chosen steering/suspension/crossmember and back axle.
When you get them in the area they will live, mark out on the floor their positions.
Remove everything including the shell and then make a tubular space frame to fit the dimensions of the shell, making all the suitable mounts for engine/transmission/axle.
Bolt all the running gear to the spaceframe to make a rolling chassis, then drop the body on top.
Make new inner wings, bulkhead and floor pan to suit new chassis/running gear.
Plumb everything in.

I seem to recall a couple pictures going around the net a few years back where somebody put a Cadillac Northstar V8 into one. It requires pretty much rethinking everything in the engine compartment and some major changes to the suspension.

Anything is possible, I know a bloke who put a 3.5 rover V8 in a mk1 ford escort.

DONT BE STUPID.
It wont fit without serious (expensive) work to the bodyshell, suspension etc etc
Get 2 litre 16v lump from a newer golf and use that, it would be easier to find one that has been written off such as a rear ender and use the engine, brakes, loom etc.

Most any engine can be made to fit most any application. How much money do you want to spend? It there is a limit to the money, you should be thinking about other ways to spend it.
