There are some great folktales surrounding the Appalachian region of the US. One of the most famous is the Bell witch, out of Tennessee. There was a movie made about it earlier this year, An American Haunting. I haven't seen it yet, but I've heard it wasn't all that great and didn't really do justice to the story of the Bell witch.
The best place to find out about any folklore though is to go to a bookstore and check out a section pertaining to the subject. There's usually a good amount of books dedicated to them.

Folktales? I've heard a billion. The Grimms brothers gathered quite a few. I like the Japanese folktales, especially the one with the two frogs travelling. Paul Bunyan. Pecos Bill. We as a species have come up with quite a few, and they're very fun to read.
