Considering the fact that a 1 gig stick only takes up one slot, this would be my first choice knowing I may want to add another later on!

You need two sticks to take advantage of dual channel capabilities. If you use just one stick, then you won't be in dual channel mode. So, depending on how much total ram you need, you'll need either 2x1GB or 2x512MB.

UPDATED RESPONSE:

Why do people who have absolutely no idea what they're talking about constantly answer questions they have no business answering? It's blatently obvious that most of you have no idea what "Dual Channel Mode" means. If you're a newb or a kid, go post in "Celebrities" or "Help With Homework...stay out of here.

UPDATE II:

If you only want 1GB of RAM, then you'd be better off with 2x512 because you'll be able to run in dual channel mode. It'll run slightly faster than one 1GB stick.

I totally agree with Redsoxer! Dual-channel is better. Just make sure the chip specs are 'identical' for a smoother transition.... :-)

One stick will always outperform 2, because the computer operating system will use less cpu cycles to acces the information stored in the memory. I recommend 1 stick, plus depending on # of slots motherboard has you will keep much more room for upgrading in the future with additional memory, upgradability conquers all in computer product choices. hope this helps.

Single 1 Gig stick - like this you won't loose the extra expansion port and you can add another Gigabyte later.

there really won't be any difference in performance. stick to the 1gb stick as this will give you better upgrade options as you will be using less slots.
