fresh ones, not totally overcooked and a variety of them. There is no sense trying to eat according to what one marketing group or another tells you. trust your own taste about what you like. They are all good for you and good for your skin. There is some concern right now about leafy greens and vegetables that have been fertilized or irrigated with pathogenic materials and canned (bottled)carrot juices but you should still find a way to get some leafy greens. There are so many good things to eat. It is not like our grandparents time where there was no fresh fruit or veggies from fall until summer.

Green leafy vegetables (spinach, kale, collards, mustards, turnip) are really good for skin, and recent studies suggest they help deter skin cancer.
