Depending on what the weather temps are where you live, a carved pumpkin can last outdoors for about 10-14 days. I used to take and sprinkle some fruit-jel on the whole inside of mine after carving and it sometimes lasted the whole month of October.
You can also coat the inside with melted paraffin and it will seal it and last a long long time!!

I wouldn't carve it more than a week in advance. Depending on the outside weather it will be in pretty good condition for a week if it is cold. If not I would carve it about 3 or 4 days. Last year I carved mine 4 days in advance and it was in excellent shape, but It is warm where I live so the ants found it on halloween, so keep that in mind.

it depends on where you live, the weather, stuff like that. we carved ours three days before halloween last year, we live in texas... the hotter it is outside, the sooner the carved pumpkin will start to decay - i found also that if you do the really awesome stenciled carvings, that have real intricate lines and stuff - 1-2 days is even better (even tho you don't get to look at it long) - because those little tiny lines and stuff start to decay pretty fast! and personally, if i work that hard on a pumpkin, i want it to look awesome for halloween night!! good luck!

It last longer if you keep outside and it's cool. I'd wait until this weekend to carve though! I've heard that if you put lemon juice on the exposed carved parts it will last longer too.
