Step-by-Step Pumpkin Pie
2 c. pureed pumpkin or canned pumpkin
1 can evaporated milk
2 eggs
¼ c. honey
½ tsp. salt
½ tsp. ground ginger
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
1/8 tsp. ground cloves
Preheat oven to 425 F. Put everything into a blender. Mix well. Put pie shells on a sturdy cookie sheet. (I often buy the pie shells when I feel lazy.) Pull out the oven rack, put cookie sheet onto the oven rack. Pour batter into 2 regular, not deep dish pie shells. Carefully ease the oven rack back into the oven and cook at 425 for 15 minutes. Lower the oven temperature to 350 and cook for about 45 minutes or more. Test doneness by inserting a knife into the center of the pie. If it comes out clean or with only a clear liquid on it then the pie is done. Leave the pies on the cookie sheet. After they have cooled a bit and the pie custard has settled, put them on a cooling rack. When they have sufficiently cooled, put them in the refrigerator. Pies should be stored in the fridge because they are perishable.
Note:
This makes enough for one deep dish pie with a little batter left over. To make two deep dish pies, make two batches of filling and if you don’t overfill your pie shells you’ll have enough leftover batter for one regular pie also.
Pumpkin Dump Cake
2 c. pumpkin puree
4 eggs, slightly beaten
¾ c. brown or white sugar
½ t. salr
1½ t. cinnamon
½ t. ginger (scant)
¼ t. allspice
¼ t. nutmeg
2 c. milk (evaporated works well)
Preheat oven to 375 F. Mix above ingredients. Spray
13” x 9”pan with Pam. Pour mixture into pan.
1 box yellow or pineapple cake mix
1 c. chopped nuts
¾ c. butter, melted
Sprinkle cake mix over mixture in pan. Sprinkle nuts over
cake mix. Drizzle melted butter over all. Bake 50 to 60 minutes.
Serve with whipped cream.

Pumpkin dessert Recipe
1 c Sugar, granulated
3 Eggs, beaten
29 oz Pumpkin (1 large can)
2 t Cinnamon, ground
1/2 t Ginger, ground
1/4 t Cloves, ground
1/2 t Salt
12 oz Evaporated milk
-(1 large can)
1 lb Cake mix, yellow
-(1 standard box)
1 c Nuts, chopped
4 T butter (sweet), melted
Whipped cream
Preheat oven to 350 degrees F. Mix together sugar, eggs, pumpkin,
cinnamon, ginger, cloves, salt and milk. Line a 9x13-inch pan with wax
paper and pour the mixture in.
Sprinkle the dry cake mix on top, then sprinkle the nuts. Pour melted
butter evenly over the cake mix and nuts. Bake at 350 degrees F. for 50-60
minutes.
Cool (very important). Flip over and remove from pan. Remove the wax
paper. Top with whipped cream (which would dissolve if the cake weren't
cooled first).
NOTES:
* Fluffy whipped pumpkin upside-down cake -- Someone brought this to an
office party last year and ended up having to make about thirty copies of
the recipe for people who tasted it.

Pumpkin Roll, it's so, so good and yummy. I also enjoy pumpkin bread and my husband makes great pumpkin pie, completely from scratch.
