Huh I've never heard of people's eye color changing at all, but I do think I've heard of an albino who was born with eyes that have no pigment, and white skin. Over time that person regained their pigment gradually, and looked like an average person.

The only way my eye color changes is if I put color lenses on, or if bright light shines against my eye.

some people just change there character and that simply will do it. It is widely known that people with schizophrenia when they change their personality their eyes will also change colour too. Your dad just probably got mellow in his older years of life that is all. He must have kinder eyes now?
