I want to rig up 8 speakers for music in a pub, and need to know roughly the minimum output in watts that the amplifier will need. I assume 8 ohm speakers. I am not looking to 'rock da haus' but just need ambient music. Thank you.

To accurately decide what you need more information is required. Venue size, layout, amp specs, speaker sensitivity etc..

But you should also consider how you are going to wire them up.

If you have 8 sets of speakers...I'm assuming you are just going to have 2 channels. So that is 4 speakers per channel.

Everytime you apply an equal load across a paraell circuit....the value of each load halves. So to run 4 speakers (all rated at 8 Ohms) per channel you are looking at 8/2/2/2....basically 1 Ohm per speaker.
For ambient background music you shouldn't need anything greater then 30W. However the more powerful the amp is, the less stress it is under to power 8 speakers.
It's probably best to run 2 smaller amps and only connect 4 speakers to each. This way you can have seperate audio (not everyone likes listening to the football) and it also spreads the load so that the amps don't work as hard.

There are companies that make systems specifically for pubs & public places. places. They would charge you for the install but it might be worth looking into.

The answer to this question depends on a number of factors.
1. The ability of the speakers to convert the amplifier signal to actual sound. In my experience larger speakers produce much more sound per unit input. The frequency response of the speakers should also be taken into consideration.
2. The acoustics of the venue. Sound reflective and absorptive surfaces should be noted (carpet, room-size, concrete walls, crowding and curtains).
3. Other sources of noise present.
40watts of amp power using carefully selected and well matched
speakers can make plenty of noise. More power available will make things less tricky and allow for compensation.

Depends on the size of the speakers but if you just make sure you get a PA amp and not a HIFI amp you should be ok with about 200 watts.

I agree with above, just buy 2 hifi amps, 30-40 watts should be fine.

i also agree with edward r. it can get technical to a novice etc.
depends on your speakers ie have you got sub base, base mids , highs ..
or base ,mid, high
base ,mid/high.......
i probably link my mids into my base speakers and send one cable from the base to the amp.
but thats only one of the ways.
i would like to know what your speakers are before i would commit an exact answer.
also the room may be large but when people are in the room they absorb the sound ..
