Hard to tell, because you say little about your own thoughts in the dream. How did you feel about seeing the chicken at first? Were you hesitating to bite into it? How did you feel when you discovered it was alive? Guilty? Afraid?
Nor do I believe dreams have a single interpretation. But I think your feelings towards the dream are a better indicator of the reason you're dreaming and the unconscious ideas that are trying to express themselves.

Dreams are just extentions of our awake conscience mind, we have a sleep cycle, and when we reach "rem" sleep, this is when we are in the deepest sleep, and our subconscienc mind takes over,we take our conscience mind into our sleep, this is useful so that we can continue to be alert even in our subconscience state.
This is why a person will wake up if somone is watching you, how soldiers stay alert on the battle fields, how new moms can hear thier infant cry, when normally they are "heavy sleepers".
So usally our dreams are about things that are going on in our everyday life. You did not say, what feeling you where haveing, scared, lonely, try and remember how you where feeling. This may give you the answer.
Maybe an experience where you've tried somthing that appeared normal at first, but you had a feeling that it wasen't right, but did it anyway and it caused another or perhaps yourself to hurt and that's when you realized it wasen't right and now its bothering you, or trying to understand why you did it (this being the meaning of eating, or trying to digest somthing repulsive.
The answer is in how you where feeling!

Perhaps you've seen a movie lately, say 'bout New York?...just run off dreams.
But, seeing as how you have a good descriptor w/ emotions/feelings that permeated your conscience I'd say:
You're in a vulnerable and unfamiliar territory with your own self. Maybe you're venturing into a new depth with a job or relationship or finances or whatever.
No pain...no gain. Don't be scared to take a chance because of 'fear of failure' or any kind of fear. A skinned rat is the same as a rat w/fur to a snake.
There's a place/purpose for all...stand and take yours.

Sigmund Freud believed that dreams are the release of repressed desires. Maybe you have been wanting to eat some delicious rats? Don't' be surprised, a lot of cultures eat them and also "cavy" ,which in the final analisis is just another rodent we humans savor.

To kill one show you will have victory in a contest.
To dream of esting a chicken that you will be selfish, Business and love will remain in precarious states.

piece of chicken = desire
skin rat = things you afraid
It looks like something in your life that you are expecting or your desire may turn into something you fear. Perhaps in life, you have some sort of conflict and you somehow try to deny it. It could be relationship or it could be anything. Projecting as chicken turning into rat symbolizes fear, conflict and denial.
