Judas Priest - Talk about progression. They released their first full-length in 1974 and (with a few bumps along the road) just released another album last year. Sad Wings of Destiny sounds different from Screaming for Vengeance which sounds different from Painkiller, but they're all excellent albums. Along with Black Sabbath, they're one of the biggest influences in metal.
The rest of my top 5 (for kicks):
Death
Mercyful Fate
Slough Feg
Manilla Road
