January is definitely a great time to go. For the first couple days it may be a bit crowded because the holiday crowds will just be going home. New Year's Day will probably definitely be crowded. It's still a good time to go and the crowds will have died down towards the end of your vacation. The weather will be nice, and there'll still be holiday decorations and happenings. The best park, it's hard to pick. Obviously, the Magic Kingdom is a must, but I also really love EPCOT. If you're going for a week go to each of the four theme parks. They all are amazing and special in their own way.
Here's some information I got from the Walt Disney World website that should be helpful to you...
Lowest Attendance: January (except New Year's Day) until just prior to Presidents' week in February
The week following Labor Day until just prior to Thanksgiving week
The week following Thanksgiving until the week prior to Christmas
* You're going during a time of low attendance, so the crowds and waits in line shouldn't be too bad.
During regular attendance periods the Theme Parks tend to be the busiest on the following days:
Magic Kingdom® Park: Monday, Thursday, and Saturday
Epcot®: Tuesday and Friday
Disney-MGM Studios: Sunday and Wednesday
Disney's Animal Kingdom® Theme Park: Monday, Tuesday and Wednesday
* Now, you can decide which park would be best on which day.
Although we cannot tell you exactly what weather to expect during your vacation, here are the average high/low temperatures, followed by the average rainfall in inches for the Orlando, Florida area during the three-month periods indicated:
January - March 74/51ºF 2.1 in.
April - June* 88/66ºF 2.7 in.
July - September* 91/73ºF 3 in.
October - December 78/58ºF 3 in.
* So, you should definitely bring clothing for warm and cool weather. Expect it to be nice and warm during the day and somewhat chilly in the evening.

The only bad thing about going in January or any of the "offseason" months is that the park hours are much shorter. They do compensate for this by having special events like Mickey's Not So Scary Halloween, but these will cost additional money. No matter when you go though you still will not see everything in a day...you would need at least a week in my opinion.
However, another plus is the weather is generally much more pleasant but you may want to avoid the water rides!

I'm a fan of Disney and I travel at least ones a year to Orlando. Early January is an excellent time to go to Disney. No majors crowds, pleasing climate (sometimes cold or rain days). Remember that with no crowds you can see a Park in one day, in summer you will need at least two days to get in the rides you want at each park. Avoid the week between the 25 and 31 of December, 4 of July and summer in general, Spring Break and Thanks Giving. October is also a good time to visit, last week I travel to Disney and the parks are relative empty. In Animal Kingdom I ride two times on the Expedition Everest and in Epcot Center you can easily get fast pass to all major rides.

January should be a good time. Better question is to establish what day of the week to go. Avoid Sunday, Monday, Tuesday IMHO. Everyone flies there are hits Disney world on Sunday/Monday, then epcot Tuesday and Wednesday for other. I would go to Disney on Wed/Thurs, Epcot on Friday and other on Saturday while everyone goes home.

best time of year to go is when you can...
Jan 1-7
no crowds then except Jan 1 may have crowds if it's on a week-end a don't have to go to work Jan 2 or Jan 3, generally.
I can get cold in Jan in Orlando.. remember the stories of orange trees freezing?

September used to be a good time to go. Most of the grade school kids were back in class, so that cut down on alot of families. When I went in September the lines were much shorter and definately not crowded. If you love a crowd tho, I have heard that between Christmas and New Years it is just insane. Whenever you go, have a great time!

I have heard that Christmas is the most awesome time to go to Disneyland.. I've only been to Disneyworld, and it was in the spring, it was awesome!! Anytime you can afford the trip, the time off, the amusement park food... and coordinate all the people you want with you, it's a good time to go! (and if you do, tell Goofy I said Hi.)

the days will possibly be sunny and spectacular (mid to top 70's). The nights can get slightly nippy, interior the 50's. yet universal very spectacular climate. it extremely is not "chilly". The crowds would be sparse, yet all the eating places might have lines, the foremost attractions might have small lines. yet usually the area will look empty. I stay in Orlando and basically pass to the parks in November, December, January and February.
