Cud is a bolus of semi-degraded food regurgitated from the reticulorumen of a ruminant. Cud is produced during the process of rumination, or "chewing the cud".
The alimentary canal of ruminants, such as the cow, goat, sheep and antelope, is unable to produce the enzymes required to break down the cellulose and hemicellulose of plant matter. Accordingly, these animals have developed a symbiotic relationship with a wide range of microbes, which largely reside in the reticulorumen, and which are able to synthesise the requisite enzymes. The reticulorumen thus hosts a microbial fermentation which yields products (mainly volatile fatty acids and microbial protein), which the ruminant is able to digest and absorb.

These animals cut the grass and swallow later when time is available leisurely grind this food pulling out from the stomach which is known as chewing the cud.

Cows eat grass or whatever and partially chew it and then swallow it to one of their stomachs. They then regurgitate it back up to their mouth and chew it some more and then reswallow it in the process of digestion. This is done because most of what a cow eats takes time to chew up and time to digest. A way of quickly harvesting and then process the food later when things are more safe or slower in pace.

that's what they chew in their mouth. They have to chew a lot to digest the plants they eat (as plants are difficult to digest (breakdown chemically)). They mix it with digestive juices, secreted inside their mouth, to break the plants down, so they can digest the plant material when they swallow it.
Has nothing to do with poop.
