It is just like Western put a mirror on the end of hallway, you will be able to tell if your look okay.
Or, in feng shui reason, it's there to reflect bad luck and bad energy away.

It depends on the person. They could be doing many things.
They may like to check their appearence before they leave.
They may want to startle off burglars.
They may want to control the flow of energy.
They may want to bring the outside inside without the mess.
They may be sending beings/spirits (good / evil or no longer with us) out so they don't get lost and confused.
Too many reasons, too many more.
