I think they get mad if you pronounce it like "jar-head."

Jar= long "A", like hair
Ed= like Fed or Hid, depends on how you want to say it

So Jared= Hair-Hid or Hair-Ed

I've usually heard it pronounced to rhyme with "hair red", as with the guy on the Subway sandwich shop commercials.
