not only polynomials but everything in mathematics has uses in the real world, the hole universe is so, mathematics only help us understand it. matemathicians just give names to things that exists, many sciences can be called derived from maths, engineering is a good exemple of uses of maths, it just gives us a way to understand and deal with natural (or artificial=copies of natural) phenomenes. If a function in the real world happens to be polynomial, it is just a coincidence. studying polynomial functions or other just helps dealing with it.
