Probably an ostrich. Although vicious when defending itself,it has been known to stick it's head in the sand in it's attempt to avoid predators.They take the out of sight ,out of mind approach to dealing with potential catastrophe.In human beings this would be a personality trait of someone who barreled through life with out confronting their fears, or taking a risk to either stand up for their convictions,or improve their quality of life. Human beings with this trait ,more often than not,become victims of the dog eat dog rat race society that we have created for ourselves.

If you mean a "cowardly" animal, that would be the armadillo. It rolls up into a ball and lays there when it is thinks there is danger. Other animals run, for the most part, when they see something coming that they can't handle. Some reptiles also play dead when they are approached. A 'possum will also play dead, but will stir if you try to move it. (Most times.)
