It >always< says that while it's charging? Mine only says it at first when it exchanges data with the iTunes or when it's putting different music on there. There should be a selection somewhere on iTunes that says eject iPod which should safely disconnect it.

When you first plug your iPod in, it starts to update information. For example if you downloaded any new songs or the play count has changed it will update all of that. It shouldn't say "do not disconnect" during the entire time you are charging, though.

Mine does that also when I'm charging it from my PC. It's because there are some updates available for your iPod to make it run more efficiently. After about 5 minutes though, it doesn't matter because the updates take less than two minutes. It's okay to disconnect after a few minutes.
Also, if you update your playlist but it didn't upload it to your iPod, it may be updating it for you then.
Good luck!

For a long time, Apple has been focused on the consumer business. In years long past, Apple had a complex line-up of computer models and the accompanying peripherals such as displays, printers, speakers, and a digital camera. Then came the big cut and Apple’s product offerings were limited to a 2 x 2 matrix of computers, plus a mouse, a keyboard, and three display types. Now, led by its “digital hub” strategy, Apple is ready to expand once again into the realm of consumer accessories.
