The first Ferris Wheel was designed by George W. Ferris, a bridge-builder from Pittsburgh, Pennsylvania for the 1893 Chicago Worlds Fair.
The "F" is for his last name.

It's capitalized because the Ferris wheel was named after its inventor, George Ferris.
It's not quite the same as saying roller coaster, since the name of the object is associated with the name of the person.

It may have been capitalized because Ferris Wheel is the name of the ride. Just like you'd capitalize your own name, you also capitalize the names of amusement park rides, such as Zipper, Scrambler, etc.
