Diminishing marginal utility.

The idea is that, as you eat more, you get less satisfaction from it. Eventually, the pleasure from eating is less than the feeling of discomfort that eating more would cause, or the effort of getting out of your seat to get more. When that happens, you stop.

If you are paying for each plate, when the cost of the plate outweighs the satisfaction from that last wafer-thin mint, you'll stop.
