You have to define what is "most noble" before you can define a profession as being such. I sometimes think being a doctor that operates on people that are poor or clergy that help feed the poor. These professions that help others seems to be very noble. There are many people in the world that give of themselves without getting paid for it also. The many in this world that volunteer their work for free. Being noble and getting paid for it is not as noble as someone being noble and not getting paid for it. Most that are touched by people that do noble things usually do not think of the cost of being noble or that it doesn't cost; they are just greatful to have been touched by the people that perform noble deeds. Everyone should perform some noble deed each day if possible. Everyday should be an oppurtunity to do something noble whether it is done for free or as a profession. Often people get puffed up on thinking they do things for others out of the kindness of their heart but often get paid really good for it which is not the purest form of giving of oneself. The director of the Red Cross gets paid plenty; is that person noble or noble because they are helping and getting paid good for it? Where is the nobility in getting paid to do something?

I think teachers are, because they get paid absolutely nothing, like less than a receptionist in some cases, and they have to put up with other people's annoying kids all day long, like 25 of them at a time, and then they also have to deal with the kids' annoying parents who all think they have a little genius on their hands, when they most likely do not. On top of that, they have really strict dress codes and have to go back and take more college courses every 3 years or so to get re-certified. And even after all that, most of the ones I know are so dedicated and have made teaching their life.

My mom is a special education teacher. She works really hard, and many of her student's parents are very hard to deal with, but she does it for the children. I think that is extremely noble.
