yes you can uninstall (ie7) this is how you do that , click on start / control panel / add remove at the top of the add remove box tick the box where it says .
show updates
then move down the list till you come to where you see (ie7) click on (ie7) then click on remove internet explorer 7 will be uninstalled from the system and internet explorer 6.0 will come back

If you have recently downloaded it, then try a system restore..

Start, Programs, Accessories, System Tools, System restore.
