A gorge is really just another name for a canyon. A canyon is just a deep valley between cliffs, and it is almost always formed by the long-term erosion of a river's passage. If a valley sits between sloping mountains or hills, then it is not a canyon or gorge. The walls must be steep enough that the top is considered a cliff, rather than a peak.
