I am staying on the Gold coast for 3 weeks and have a short 2 day break stay in Sydney which has been paid for.

I am not sure how much spending money I should take - would $2000aud be enough?

the Australian Taxation office put out figures of what they think is "reasonable" spedning money on trips and Brisbane is around $200 per day - including accommodation.
if you work on about $15 per meal and about $50 per day your could live reasonably ok, but not extravagantly

hey there you will need more than $2000 for a 3 week stay if you want to experience all the sites of the gold coast well they are very expensive , but if you just want to go window shopping and spend loads of time at the beach then $2000 will do just fine, i stayed there last year and i spent about $2500 in 10 days that also included buying gift's for my family , if you budget you could scrape in

enjoy your stay

When I go to the Gold Coast, I allow $100 per person per day. This is for food and entertainment.

I've never gone without on this budget, and usually come home with change, but this is because I make sandwiches and a drink to take with me to the theme parks (I find their food greasy and over priced).

I guess it all depends on what you want to do? and how you wish to stay? I've stayed there for 7 days for about $40 a day (accomodation/food/ etc) But I'm aware it can be lots more expensive. try RACQ ( travel/website) for accomodation and ideas.

Probably not, you will be looking at about $100.00 a night accommodation and at least $50.00 a day food. Add entertainment and the bill only goes up
