I would like to use a stain (preferably cherry) so the wood grain comes through.

To Stain wood, you must get to the wood, Varnish is a barrier and it works both ways, its intended purpose of protecting the finish, inhibits what you propose- you have to remove the varnish, which is probably not varnish but Laquer, - if your cabinets are flat panel doors its not a big problem to sand them, but if they are raised panel or routed groves, and moldings, you are asking for trouble and an unsatisfactory result.
You would be better off buying new doors, and sanding the cabinet frame - which is flat and easy to refinish.

You don't have to strip them. Just lightly sand them to remove the varnish. Then use what is called "Gel" stain available at the Home Depot. You can go right over the cabinets and they will look great. I sometimes use two coats but I have used this proceedure more than a few times.

You can also use this gel stain to change drywall into wood look by painting the drywall wood colors and then apply the gel stain over. It's an amazing transformation.

Although it would be preferable to remove the varnish to restain the wood, some companies make a tinted finish. Varathane is one I know of and you would just apply this over the varnish.

That is a big NO! you would have to strip it to get the old varnish off! Because the stain pigment would not get to the wood to bring out the wood grain! I personally would not use cherry, I would use a darker oak stain.This would bring out the woods age lines (wood grain)!

Lightly sand the shine that's on your cabinets making sure you are lightning up the varnish. Use a tact cloth or a rag dampened with thinner and wipe down all the sanding dust. Then you are good to go with your new stain.

The varnish has to be removed or the wood won't take the stain.
