An office assistant helps in all tasks in the office, including papaer work, phone calls, faxes, etc, whereas a data entry operator only enters data in the computer, that's all the d.e. operator does, nothing else, but an office assistant could also be a data entry operator , but not vice-versa.

Office assistant is help around the office as well as typing, such as copying, answering telephones. schedules the meetings and the meeting rooms, serve coffee or anything requested by the boss that are appropriate only.
Data entry keyer is just typing in data.
