Basically because in the old days salt was considered common but necessary and dependable for curing and preserving meat as well as needed for the farm animals a person that is the salt of the earth is just a good man not flashy but dependable.

It refers to something in the Bible.
Salt makes ordinary food tastier (this expression originated way before anyone worried about high blood pressure, etc). So if you are "the salt of the earth," then you basically make the world a better place.

it's in the bible used to describe someone who believes in Jesus.
Back in the day salt was used as a preservative for meat so it's like someone who preserves the world from "rotting". Like a good guy praying for peace.
If theres some good in the world that little bit helps.
Used in a non christian way If someone says "he thinks he's the salt of the earth" it means like goodie two shoes OR thinking one is better than others
