You could do a trick, then expain it scientifically.

Get a saucer and a short glass (filled with just enough water to fill the saucer), a lemon wedge, and two matches. Pour the water from the glass into the saucer and dare somebody to get the water back into the glass without picking up the saucer.
Then, stick the two matches in the lemon wedge, place it in the water on the saucer, light the matches, and immediately cover with the glass upside-down.
The water will be sucked up into the glass. You got the water into the glass without picking up the saucer.
Write a short report about the oxygen being used by the flames and being replaces with water.

You could have several "displays" that use a similar idea. You could have one of those cat water fountains that hold a full 2-liter bottle over a shallow dish. This is about air and gravity.

You could make a "volcano" with a mentos in a soda bottle (watch out, you'll have a mess to clean up when it erupts!)

You can make your own lava lamp and explain the weight of the oli and how it changes when it drifts closer to the heat source.

You could get crystal growing kits at the toystore and grow some under different temperature conditions (fridge, by the heater vents, in the bathroom, garage) and discuss how temperature affects crystal growth.

You could make your own rear-projection tv (LCD projection). Or you could make an SLR camera.

You could make your own telescope out of pvc pipe.

Make a potato gun. Better shoot it outside!

Here's a cool one: demonstrate Centrifugal Force (like the silly silo at the amusement park where the floor drops and you stick to the walls)
Get a record player, a drill, and a piece of pvc pipe. Make sure it is wide in diameter but 12" tall. Attach a "base" to cover the opening on one end. Mount it over the drill. Test different objects (ping pong ball, tennis ball, other objects. Test what shape and weight of different objects are necessary and what speed revolutions needed to make each object "stick" to the walls inside the pvc pipe. Tape a string to a ping pong ball and tie it to the axis on the record player to demonstrate how it moves away from the axis.

You could alter the magnetic properties of different metals. You could make an electromagnet and use a small train and some tracks.

Breed some mice (diferent colors) and do a genetics experiment.

Pierce a potato with a straw by covering one end opening with your thumb.

Have fun with this! You'll do great.

Are you talking physical science (biology, geology, etc.) or is your teacher open to behavioral science projects? It's always neat to do preference tests (like what kind of soft drinks do people in different age groups prefer) and they're relatively simple while remaining statistically valid.

Leaves are kind of like solar panels. You might show how a leaf acts a solar panel in that it converts sunlight energy into use able energy (through a process called photo-synthesis). Hope that helps.

I don't understand. What is an exit project? Your next sentence doesn't make sense either. Please provide more details. It's confusing.
