I recently discovered I very likely have a benign genetic condition called essential penosuria which is likely to make me an Ashkenazi Jew. My ancestors on my mother's side are from Poland but I always was led to believe everyone is Catholic. Can someone educate more on this situation and on Ashkenazi Jews as well? I would love to hear more.

Ashkenazi Jews are Jews who were forced to leave Israel by the Roman empire, and who ended up in Germany. From Germany, they migrated to other parts of Europe.
Most of the Ashkenazi Jews were murdered by the Nazis, especially the Polish Jews, who made up the largest Jewish population in Europe.
If your mother's mother was Jewish, then so are you. Being Jewish is a spiritual quality which is passed on through one's mother.
