why did the sound change (besides the fact that te singers were different)

Actually, most of the actors were the same, only Mimi and Joanne were recast from the original Broadway cast. There were some edit changes to transfer the play to film, and some changes were do to the change in the actors' voices over the last 10 years. Add to that different sound mixers, different recording studios, etc. It's good to see that it evolved some.

Do you mean sound quality-wise? It is the same with every movie made after a broadway musical. The music will never sound the same given that in movies, the sound effects are better controlled and manipulated since it is not live, they can pretty much make the music sound as stunning as they want. When it is live, music mainly depends on the equipment and theater where the show is being performed.
