Aluminium foil typically has a highly reflective side and a more matte side. This is a result of common manufacturing processes. As aluminium foil is easy to tear, the foil is sent through machines in pairs. The side where the aluminium foil was in contact with the other sheet is more matte than the exterior side. This unconformity of finish has led to the perception that favoring a side has an effect when cooking. While many believe that the shiny side's reflective properties keep heat in when wrapped on the interior and keep heat out when facing exterior, the actual difference is imperceptible without instrumentation.

The shiny side will reflect the heat back onto the food. If you want it to cook slow, put it shiny side down.

I always put the shiny side away from the meat i.e. meat on dull side then wrap it. It looks prettier and I think it spreads the heat more evenly.

For a pocket stew the uninteresting area is on the exterior to absorb the nice and comfortable temperature and the bright area is on the interior to shop reflecting the nice and comfortable temperature into the stew. For a kite flying at nighttime that would want to be suggested as a unidentified flying merchandise i might want to signify bright area at the front.

Aluminium foil has been researched and it turns out that it could possibly cause altzeimers disease.
Silver side towards food though to reflect heat onto the food.
