Galileo's telescope does not turn things upside down because he used a negative lens for the eyepiece. Modern astronomical telescopes use a positive eyepiece and do turn things upside down.

Galileo's telescope was a refractor, using only lenses to focus light.

Newton's telescope was a reflector, using a curved mirror as the objective lens, although still using a lens for the eyepiece. To avoid the observer having to block the light entering the telescope with his head, light is directed to an eyepiece to one side by a small flat mirror.
