A manifold will have one tube that connects to all cylinder ports with one exit. so the flow is all restricted, while one cylinder is trying to force out exhaust it cant interfere with another and lower performance, manifolds also interfere with scavenging and the exhaust from one cylinder can contaminate anothers intake charge. Headers are individual pipes that connect further down stream of the head into a collector. that way the car has better scavenging and the cylinders Can release exhaust gasses more effectively and without restriction. they also sound badass.

Headers are less restrictive, which means it is easier for the exaust gasses to escape, thus releasing horsepower. Also, headers are usually tube shaped and 99% of manifolds are square.

headers are tuned better and have less restriction/back pressure than a normal exhaust manifold. The have longer runners and better collectors so the exhaust flow is not disturbed or run into exhaust coming out of other cylinders and creating back pressure.
