They don't say...it's an ongoing joke because every state in the US has a town named Springfield. Everytime they start to make a reference, they stop, so we'll never know which state it's actually in. Whenever they locate the town on a map, for instance, we never see the map. In the "Behind The Music" episode the state is mentioned but there are several versions of the show, each with a different state name (including Kentucky and Missouri), to keep the not-revealing-the-location-of-Springfield joke going.

They've never said. And if they have, they've contradicted it with other state's Springfield's in other episodes. So we don't know for sure.
They've just kept it that way to add to the anonimity of where the Simpsons live.
On the IMDB Simpsons Trivia Page it states:

It isn't an actual Springfield. Springfield U.S.A is the town they live in but it is given that name because there are many Springfields in the USA.

I think that was the whole point of naming the town Springfield; on occasion, Simpson's characters have made allusion to the fact that no one is sure exactly where "Springfield" is, so it's kind of an inside joke. DOH!!

I have always heard that Springfield was chosen because almost every state has one. That way any or every state could take the credit or avoid the blame depending on how you look at it.

It is all the states. They have all the aspects of every state. There are mountains, then you drive out of town into the desert, then there are lush forest and swamps. That is why they picked the name Springfield because every state has one. I have pondered this question many times myself
