They don't. Scientists use a new technique called "carbon dating" that allegedly is able to determine the age of fossils, etc.
They accept this with blind faith as the latest scientific technology.
They seem to forget the myriad other scientific technologies or beliefs that have been proven to be wrong over the centuries. For example, the scientific community once believed the Earth revolved around the Earth; they once believed the Earth was flat; and they once believed Pluto was a planet!
Funny, isn't it?
Scientists will accept "carbon dating" on sheer faith, but they're unwilling to accept a "creationist" theory on sheer faith.
It shows the utter arrogance of a group of intellectuals unwilling to accept the fact that they don't know squat. -RKO-

In the interest of providing an unbiased answer, you should know that Creationist dispute these methods and you can more about why here:

For me the Radioisotope-Dating may be an imperfect solution but it's better than the Creationist fantasy.

They use a carbon dating technique to find it out. All species on Earth are carbon based lifeforms, so there is always a clue even in their remains as to how long ago they lived.
