The PSI on the pressure switch must match the lowest pressure in the tank when the tank is empty. Usually you can get a pamphlet at the store.

They usually have a 3/8" nipple on that screws into either the pump or expansion Tank. A Plus is they are Already set for around 60lbs pressure pump off and around 25 to 30 lbs on.

it depends on size of tank and system you already have but most water systems are about 50-60 psi. try and see what the old pressure switch says and repalce it with one of same pressure limits. you are not wanting to increase pressure and blow out your pipes

Pressure switches are usually adjustable. Two screws, one for on pressure, the other for pressure difference to shut off (ie off pressure). Typically they are set for roughly 45-50 pounds maximum pressure.
