I find it hard to believe a violin can hit such a low note.

Robbie Steinhardt is listed as playing - Violin, Viola, CELLO, & LAP CELLO on the album credits. So, while he possibly did not replicate that in concerts, it does seem likely that the deeper CELLO was used for that song.

A symphonic orchestra that uses a sax for three songs doesn't automatically become a jazz band. I don't think you can set a rule that general for styles of music. Some metal bands use all kinds of unusual things (unusual as in unusual for metal) for a desired effect. False in my own opinion as a music artist. I would call a metal band that has a whole S&M sort of thing going on all the time symphonic but I would not call a metal band that uses a violin for a few songs symphonic.

The song is only guitars and violin. The acoustic guitar plays all the way through, and when the solo comes in, it is simply a violin playing both parts.

I listened again - the deeper parts in the studio recording do sound like a cello - but on the live performance it's all violin & different (what I listened to, anyway).

maybe the low note you hear is one of the guitar parts or maybe even the bass part
