Very simple and stupid answer : GSM needs a SIM card and CDMA phones do not need one.
The technical answer is : GSM (Global System for Mobile Communications) as the name suggests lets you use the phone with any SIM card (only if the phone is unlocked and not bought by way of a plan like it happens in the US) and in any network as long as the bandwidth is supported ( please google Quadra-Band for more information).
CDMA ( Code Division Multiple Access) is generally confined to a particular network. These phones based on CDMA would be manufactured for the service provider by the mobile manufacturer. I can go on and on with the differences but i guess i have already answered your question in two ways. Do let me know if you need more information.

Unlike GSM mobile networks, CDMA does not assign a specific frequency to each user. This means, in a GSM (Airtel, Hutch etc.) network, every user has a set frequency (like radio frequencies for) which the user uses to talk. But in CDMA there is an open frequency for each service provider (Reliance, Tata etc). This open frequency rangecan be lused by any user who has subscribed to that service provider. For CDMA, in peak hrs the entire bandwidth is choked up due to heaxy traffic, it is difficult to find any free frequency and hence we get the message like “Network not Available”.

GSM: a network that uses a basic connection interface that comunicates with one phone tower at a time.

CDMA: will commuicate with 2 towers at a time and can change between analouge and Digital(GSM) stystems, which is why better in regional areas

and for future reference 3G networks use 3 towers at once, hence why they called 3g and can send video phone calls etc.

The question isn't that clear. If your asking for phones that are dual Sim and you only want Samsung and Nokia then the Samsung Galaxy S Duos is a dual Sim phone that you should look into. They have in on Amazon or other online shops.
