By itself, Windows does not allow hiding of some/all taskbar windows.

But I use a small, password-enabled encryption program (Incognito) that allows me to encrypt files and folders even as they (including their desktop shortcut icons) are rapidly hidden in an encrypted virtual-drive when I hit the hotkey. Furthermore, all other open, unencrypted applications/files are also hidden/minimized; only my encrypted files are saved, encrypted and shut down.

There are a number of similar programs freely available, just as there are a lot that you have to buy.
