I have read a million posts already on bleeding Coolant systems... and almost none of the posts were accurate when it comes to bleeding a Dodge/Chrysler 2.7L engine...

I had to take out the coolant sensor at the top (water outlet housing) and then added the coolant in there till it wouldn't take any more. Then I fill up the resevior (CAPLESS RADIATOR) and then I ran it with the bleeder screw open a bit and it let some air out and then I stopped the engine after 10 minutes and tightened the screw back up....

BUT, I don't think I got all of the air out because the gauge is still acting wacky, and sometimes heat comes out of the vents and sometimes it does....

It's NOT a thermostat or radiator problem, I've already replaced the thermostat and the radiator is fine... I just need to get this thing bleed..and I have read the manual and haynes proceedures and their greek.... I want a real world explaination...

You almost did it right.
Do what you did, Run the car . Open that brass screw and do not close it untill you get a steddy streem of water. It will spit water then some steam then water and keep doing that untill it comes out a steddy stream. Then close the brass screw.

If you left the bleed screw loose while running and coolant didn't come out, then it isn't full.

On Subarus, we generally take off the top radiator hose, and fill the system thay way, as it has a bottom mounted thermostat. But, we do have regular radiator caps. It is our opinion that the front of the car should be up on ramps or a curb to insure the air goes up.

Goldwing is right,sometimes it takes a long time to get all the air out and I do understand your frustration
