Because in most states...there are laws that prohibit the person performing the cereminy from being a participant an any other form, they cannot be the groom, bride, or a witness.

What possible rational is involved in this Q?

Assuming you love each other, and this isn't a social event of the season destined to end up in your local newspaper, why not a bargain at a Justice of the peace,,,a Judge, EVEN a Notary???

Is there some abstract special significance involved???

The idea is to wed in a company of witnesses. Your making a covenant; that is a public act, not a private one.
