You must change the sign of the number that you are subtracting.
In this case, -7 becomes +7.

Then, we have:

-8 + 7 = -1

-8 - -7
When subtracting an negative, it is the same as adding a positive.
So, it becomes
-8 + 7 or 7 - 8 (same answer- find difference, keep sign of number with the larger absolute value)
This equals
-1

As most others have said, its -1.

Subtracting a negative is the same as adding the positive.

When I was young, I found it easiest to think in terms of 'money' and 'debt'. - numbers are like debt.

So in this case, I start out, I owe 8 bucks. then i take away a debt of 7 bucks. So I now only owe 1 dollar.
