There are over 200 reactions in Organic Chemisty, you can't possibly know how to memorize them all. You must learn the mechanism of the reaction. Once that is understood, then all you need to do is no the end product of any reaction. For instance,

Reactant -> H2O ---> Alcohol

The mechanism is that the OH is stripped from H2O and attaches to the Reactant. The additional H is sent back into solution. Learn mechansim and you are golden.

Just keep writing out the general reaction on paper many times until you can do it from memory. Then give yourself some practice reactions and see if you can do them without any help. I know that it is often really overwhelming to have to remember so many reactions but if you give yourself enough time you will be able to do it.
