Spitting is llama's way of establishing a herd "pecking order" and resolving food issues among each other. Female llamas will also spit at male llamas when they are pregnant, to let them know that they are not interested. Llamas don't usually spit at people unless they have been mishandled. A few llamas will spit when they are having work done such as grooming, shearing, toenail trimming or when vaccinations and worming medications are administered, but most llamas that I've encountered will tolerate those procedures without spitting. Llamas do not like to spit, it leaves a bad taste in their mouth and they will have their mouths hanging open for a long time after they spit, so they will usually only spit if they are extremely annoyed. Alpacas will also spit, for the same reasons that llamas spit.

llamas spit in self defence. It's kind of a warning to it's predator that a good hard kick is coming next.
