Where there any US Civil War battles in Texas or what's now called "the southwest"? (i.e., New Mexico, Arizona, California or, for that matter, the Mountain West.)

Yes, there were battles in Texas and what is now New Mexico.

In Texas - There were two battles in Galveston, two at Sabine Pass, and one at Palmetto Ranch.

In the New Mexico Territory, there were battles at Valverde and at Glorieta Pass [inspiring the battle in "the Good, the Bad, and the Ugly."]

Here is a fascinating fact: the first modern concentration camp was developed by the U.S. Government at Fort Sumner, New Mexico Territory in 1863. The Union rounded up the Navajo and Apache, force-marched them several hundred miles across the territory [shooting stragglers], and imprisoned them at a place called Bosque Redondo for the duration of the Civil War. The British in the Boer War and the Nazis in World War Two studied the US policy in establishing their own camps.

There was a battle at Picacho Pass in Arizona between two small units of Confederate and Union regulars.

This was the westernmost battle of the Civil War.

though Texas was a slave state they did not officially partake in the civil war as a state and were not a part of the confederacy ,many Texans did however volunteer in other states such as Louisiana

No actual battles were fought, but battalions and armies were formed in the event that the war did spread. For example; an army was based in Southern California. There is a museum there called the Drum Barracks. See link: http://www.drumbarracks.org/
