In Rachel Ray's $40 A Day visit to Portland she gives this recipe for huckleberry pancakes she had at the Multnomah Falls Lodge:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 sup sugar
2 eggs
2 tablespoons vegetable oil, plus more for griddle
1 & 1./2 cups milk
5 ounces huckleberries (may substitute blueberries), fresh or frozen, plus extra for serving
Whipped butter and maple syrup, for serving.
Mix flour, baking powder, salt, andsugar in a bowl. Stir in eggs, opil, and milk just until combined; do not over-mix. Lightly oil a griddle and heat over medium low heat. Pour four 1/4 cup ladles full of batter on the griddle. Add 1/2 ounce huckleberries to each pancake. Cook 2 minutes on 1 side, dabbing the batter over the berries to prevent them from sticking when flipped. Flip pancakes and then cook another 2 minutes on the other side. Place the pancakes on a large plate and serve with extra huckleberries, whipped butter, and hot maple syrup.
