I just cut open a spaghetti squash from my garden and lo and behold inside I found four pairs of bright green leaves attatched to stems approximately four to six inches long. I have never seen this before! What causes it?? How does it happen? With the leaves not being able to get any sunlight inside the squash, how do they get so green??

you left it on the vine to long for one thing
it is over mature but should be fine to eat
undoubtly this is the way the spaghetti squash
reproduces and the leaves could still get light through the squash

they are using stored sun light and will turn pale if you had not cut it open.

I don't know the answer, but that's really cool! Did you try planting it?
