Well, the stripes are more restful for the eyes than the stars which can be a bit over-exciting- especially if you have been on recreational drugs!
I imagine the same reasoning underpins settling for red white and blue as the colours. One can envisage an early flag committee considering lime green, shocking pink, and day-glo turquoise, before reverting to the old colours that had featured on Britain's Union Flag!
