At my college there's a math professor who claims that when looking at numbers and math problems, they see different colors instead. Is there any known condition that can cause this? Has anyone ever heard of such a thing?

Yes, as another person already stated, there is something called synathysia--probably misspelled--where the various senses get mixed in the way you are describing. I think there was a good article about this in Scientific American around three or four years ago.
